A few years ago, Chef Kristi was inspired to celebrate Martin Luther King Jr. day in a new way. This is our third series of Dr. Martin’s and Coretta’s Favorites! Why is Mrs. Coretta’s Favorites vegetarian? Chef Kristi learned from a close friend, who was at one time Mrs. Scott’s Chef that Coretta Scott King became a vegan upon the suggestion of her son, Dexter Scott King – who was convinced that the next level of non-violence was a vegan/vegetarian diet. In their honor and in celebration of their love and their love of food, here is Chef Kristi’s interpretation of their favorite meals.
